The room
Cabo sits below street level on the Minories, a few minutes from three stations and far enough underground that the city stops at the door. Low ceilings, warm light, and a bar built so nobody has to shout their order twice.
Agave first — mezcal, tequila and a short list of things built around them — then the classics, made properly and made quickly.
Small plates until late. Food designed to be shared across a table, not balanced on a knee.

The room
Tables & booths
Booths seat six to ten, with bottle service, mixers and ice included. A deposit holds the table and comes off the bill — so the only thing left to argue about is who is paying.
